Delicious & Easy Pumpkin Cheesecake
Crust *
- 1½ cups of gluten-free riceworks® Baked Cinnamon whole grain crisp crumbs
- ½ tsp ground ginger
- ½ tsp cinnamon
- 1/3 cup melted butter or margarine
Filling
- 1½ pounds (three 8-ounce packages) GF cream cheese softened
- 1 cup granulated sugar
- ¼ cup brown sugar
- One 16-ounce can GF pumpkin puree
- 2 eggs
- One 5-ounce can evaporated milk
- 2 tbsp cornstarch
- 1 tsp cinnamon
- ¾ tsp nutmeg
Topping
- 2 cups sour cream
- ½ cup sugar
- Vanilla extract
| - | Preheat over to 350 degrees. |
| - | Combine crust ingredients and press into bottom and slightly up sides of greased 9-inch spring form pan. Bake for 8 minutes. Allow to cool while making the filling. |
| - | For filling, beat cream cheese and sugars together until fluffy. Beat in pumpkin, eggs and evaporated milk. Add cornstarch and spices and beat well. |
| - | Pour into crust. Bake for 60 minutes or until edge is set. |
| - | Combine topping ingredients and spread over warm cheesecake. |
| - | Return to oven and bake an additional 5 minute. |
| - | Cool on wire rack. Store in refrigerator until ready to serve. |
